Great warm for dinner or cold for lunch! Another light summer essential.
Ingredients: (serves 6):
1. 1 package of noodles, chow mein
2. 8 oz firm tofu, cubed
3. Bok Choy, chopped, 2 cups
4. 2 bell peppers (red, orange or yellow), thinly sliced.
5. Red onion, thinly sliced
6. 1 bunch scallions, thinly chopped.
7. Broccoli head, chopped, 2 cups
8. Mushrooms, sliced, 1 cup
9. Snap peas, 4 oz
10. 1 pkg bean sprouts, 100 g, chopped.
Dressing:
- Hoisin sauce, 2 tbsp
- Sesame oil, 2 tbsp (save 1/2 tsp aside)
- Peanut butter, 1 tbsp
- Sambal oelek sauce, 1 tbsp (optional)
- Soya sauce, 2 tbsp (save 1 tsp aside)
Method:
1. Put chopped tofu in air fryer with drizzle of oil (1/2 tsp) and soya sauce (1/2 tsp). Start air fryer on 350 degrees for 10 minutes. Stir or shake contents every two mins to prevent tofu from burning. Turn off air fryer once tofu crispy.
2. Put noodles to boil with another 1/2 tsp soya sauce.
3. In a bowl, combine marinade. In a wok, or large pot, add marinade to high heat. Add vegetables once oil is hot. Stir fry vigorously. Once vegetables are slightly cooked and vibrant, add noodles and stir fry for another 5 minutes. Add tofu, stir fry for another 5 minutes.
